Root Beer Chocolate Butter Cake and Giveaway Reminder
Chocolate and Christmas time, go hand in hand for me. Inspired by Pinterest, we made some festive "Reinbeer", but instead of using beer, we used IBC Diet Root Beer. Then I got to thinking how root beer and chocolate would make a great combination. Thus my Root Beer Chocolate Butter Cake was born. This cake is so easy, you hardly need a recipe for it.
1 Box of Milk Chocolate Butter Recipe Cake Mix (I used Betty Crocker)
1 1/4 cups of Root Beer (we used diet)
1/3 cup of soft butter (I used salted butter)
I used 3/4 cup of Cholesterol Free Egg Product, or you can use 3 large eggs
Whipped Chocolate Frosting (Store bought)
Optional: Root Beer Extract
Prepare cake mix as directed, except use your root beer in place of the water. I live in a high altitude, so I often use a bundt pan, as recommended on the cake box. NOTE: it only took 37 minutes to bake in the bundt pan, much less then recommended on box. So please keep an eye on your cake, so that you don't over bake. It is done when a tooth pic inserted into the center comes out clean. I baked mine in a greased and flowered pan. Once done, run a butter knife gently around edges, to release cake from pan, and invert cake onto a wire rack to cool. Frost when completely cool. Store covered in fridge.
Tip, if you would like even more root beer flavor, add a drop or two of root beer extract to the frosting, and stir to combine.
Not necessary, but I drizzled a slice for me with some caramel and chocolate syrup,
(if your going to be bad, do it right :)
I made this cake for a friends Birthday party last week, along with a second chocolate cake (just in case this one was a bust). It was a big hit, however, and was preferred over the regular chocolate cake. It was the second year in a row these particular friends requested a B-day cake from yours truly. Sort of made me feel like Ina Garten from the Food Network lol. Although she would have made the cake from scratch, but that's not how this busy momma rolls. This cake would be fun to serve at a twenty first birthday party too!
