Easy No Butter Key Lime Avocado Cookies Perfect For Saint Patrick's Day


Hear me out, I know "no butter" sounds like no fun, but these cookies are so moist and chewy. They remained soft days after baking them too.  I think it's all due to the avocado. Avocado replaced the butter in these easy Key Lime boxed cookies. They would make a perfect treat for Saint Patrick's day! 


 Ingredients:

1 large Avocado or (1/2 cup mashed)
1 box of Pillsbury Key Lime Cookie Mix
1/4 cup of Cholesterol Free Egg Product or 1 Egg
Duncan Hines Frosting Creations Key Lime Pie Flavor Mix
Duncan Hines Frosting Creations or 1 Container of Whipped Fluffy White Frosting
Key Lime Marshmallows (optional)


Directions:

Follow directions for baking cookies on the box of cookie mix, except substitute avocado for butter. Mix frosting and flavor mix together. Frost cooled cookies and top with Key Lime Marshmallows. This recipe makes approximately 33 small cookies.

  1. That's thinking outside the box....well done! And because they have fruit in them (lime AND avocado), I think that means they're healthy and you should have more. :)
