Teri's Orange Cream Tart

I am excited to be here visiting Mindie and everyone at Bacon Time with The Hungry Hypo today. I have one last summer recipe to share with you today. Lately, I have noticed that the days are getting just a little bit shorter, so I guess it is inevitable that summer will be ending soon. I just wanted to drag it out a little bit with this dessert, an Orange Cream Tart. This tart says "summertime" to me!

Orange Cream Tart
(makes 3 mini tarts) 

1 package Graham Crackers
2-3 tablespoons Butter
1 cup Sugar
3 tablespoons Cornstarch
1/2 cup Orange Juice
4 Eggs, slightly beaten
1/4 Butter, melted
Orange Food Coloring
1 cup Heavy Whipping Cream
1/2 cup Sugar
Orange Sprinkles

To make 1 large tart, double this recipe.
Place your graham crackers in a plastic zip lock 
and crush with a rolling pin. Place the crumbs in a bowl
and add your butter. Mix together. If more butter is needed,
 add a little at a time.
Press the mix into the bottom
 and up the sides of your tart pans.
Using a pan that is not aluminum, add your sugar, cornstarch,
lemon juice, eggs, and butter. Cook over medium low heat,
whisking or stirring constantly for 10-12 minutes.......
or until it becomes thick and begins to bubble.
Make sure when you are stirring that you are getting
all the edges of the pan. The cornstarch likes
to hide there! Remove from the heat and stir in your food coloring.
You do not have to add the food coloring. Your dish will still 
be delish, only not as orange.
Let cool, then pour into prepared tart pans, and cool completely.
Make your whipped cream by mixing your heavy
whipping cream on low to start and them adjust the speed to
high after a few minutes. As you adjust to high, add the sugar.
Whip until thick peaks appear.
Place a dollop of whipped cream on top of you tart
and sprinkle to your hearts content!
Compliment with a mug of milk!!
