I brought this Pepperoni Pizza Stuffed Baguette to a party recently, and it was a huge hit! Stuffed baguettes are a great, no bake, make ahead appetizer, that will be perfect to serve this holiday season. The filling on these is red and green, with bell peppers and spinach, and pepperoni and sun-dried tomatoes, making them perfect for Christmas. You may easily add or eliminate ingredients to suit your taste.
Pepperoni Pizza Stuffed Baguette
1 (14 oz) sourdough roll or baguette, sliced in half, and hollowed out
1 container of whipped cream cheese
1 package of shredded mozzarella (2 cups)
1/2 clean large green bell pepper, seeds removed, diced
1 small package of pepperoni, diced
a couple handfuls of clean baby spinach
diced sun-dried tomatoes with herbs and extra virgin olive oil (plus 1 or 2 tbs of oil from jar)
garlic powder (to taste)
red chili flakes (to taste)
Slice roll or baguette in half, and hollow out, with a knife and your hands. Mix remaining ingredients together, until well combined. Stuff both ends of baguette completely. Wrap in plastic wrap, and chill for at least 2 hours. Slice and serve when ready.
