Hawaiian Cheeseburger Egg Rolls With Spiced Rum BBQ Dipping Sauce

These egg rolls and homemade BBQ sauce are so good, and easy to make.  Homemade BBQ sauce would make a great gift for the grill master in your life.  You may serve these as an appetizer or side dish. To be honest, I can't stop at just one, so we serve them as the main course.  They are stuffed with lean beef, bacon, avocado, cheese, pineapple, and tomato, making them a very satisfying meal. 

Hawaiian Cheeseburger Egg Rolls
Makes Approximately 12 Egg Rolls 

3/4 a pound of lean ground beef
1/2 tsp onion powder
1/2 tsp garlic powder
(salt and pepper, to taste)
4 slices of Hickory Smoked Bacon, Fully Cooked
1/2 avocado, diced
1 cup shredded Sharp Cheddar Cheese
1/2 cup crushed pineapple, drained
1 small tomato, diced
1 package of egg roll wraps
1/2 cup of canola oil (for frying)
Optional: Serve on a bed of lettuce or arugula. 


Brown lean ground beef in a frying pan. Drain off excess fat. Season with onion powder, garlic powder, salt, and pepper to your liking. Crumble 4 slices of fully cooked bacon into pan. Add your remaining ingredients (excluding oil) to pan. Stir to combine.  Follow the directions on the package of egg roll wraps for filling, folding, frying, or baking, if you prefer. If frying, cool on paper towels to catch excess oil.  Serve with homemade spiced rum BBQ dipping sauce. 

Spiced Rum BBQ Dipping Sauce
Makes Approximately 12 oz 

1 cup store bought sweet roasted peppers from a jar
1 tsp minced garlic
1 tsp canola oil
1/2 cup pineapple juice
1/4 cup clover honey
1/2 cup ketchup
1 tsp onion powder
pinch of black pepper
1/4 tsp salt
1/4 tsp cayenne pepper
1/8 cup Worcestershire sauce 
1/4 cup brown sugar
2 tsp Hickory Liquid Smoke
1/8 cup Apple Cider Vinegar
6 tsp Spiced Rum (I used Sailor Jerry brand)


Lightly saute minced garlic in oil. Place garlic and remaining ingredients in a food processor, to combine. Pour into a pot, and simmer on low, until you reach a consistency you like.
