High Fiber Reduced Fat Easy Chile Verde Chicken Spaghetti
Inspired by all the green posts out in blog land celebrating Saint Patrick's Day, I came up with a green recipe of my own. This recipe is perfect for a quick weeknight meal. It's great when you can't decide between Mexican or Italian cuisine. With this recipe you won't have to decide. It is a twist on two family favorites, Chicken Chili Verde, and spaghetti. Instead of serving the Chicken Chili Verde in a tortilla like I typically wood, I serve it with Spaghetti. A fully cooked rotisserie chicken from our local deli, makes this even easier. If you have a pot and a can opener, you can make this meal. It's high in Fiber, partially because I used Barilla's White Fiber Spaghetti. I avoid wheat spaghetti, since we don't like the taste of it. Barilla's White Fiber Spaghetti is very high in fiber and whole grains, but taste like regular spaghetti.

"Rollsagna" Lasagna with a Twist Guest Post From French Press
This is SO exciting...my first guest post. I'm Heather and you will usually find me at French Press.
Today, you find me here - obviously:) and I couldn't be happier.
Growing up I can remember my mother making something called a rollsagna.
Basically, it was a lasagna rolled into a loaf of bread and baked.
My daughter, who I lovingly refer to as the fussy one, happens to love lasagna and bread.
I enjoy lasagna as well, except, that my daughter will only eat it if I also make the pasta.
I've created a food monster. At first it was cute, she loved my homemade food. Now, it can be difficult. Forget about ever taking her out to eat.
In an effort to cut down on our dinner time drama, I wanted to make her something she would like.
Unfortunately, it's seriously HOT here. Lasagna was NOT going to happen, but I did have all the ingredients home and ready. I also had extra crescent rolls waiting to be used.
That's when I remembered my mother's rollsagna.
The rolls were so easy to make, delicious, and fussy one approved. It doesn't get better than that.
For the Rollsagna:
1 lb Italian sausage or ground beef (browned ans seasoned)
1 zucchini thinly sliced
4 oz of shredded mozzarella
1 tube of crescent rolls
sauce of your choice
unroll your crescents
layer with zucchini strips
cheese
meat
roll them in the crescent shape and bake according to the package
serve plain or topped with sauce
Much easier than lasagna and just as good.

Perfectly Easy Pork Chop Dinner (Reduced Fat & Sodium)
I love making pork chops. Thin cuts, don't take a long time to cook, and go well with a variety of side dishes. I love that I often find them on sale at the grocery store too. This pork chop dinner was easy enough to prepare, making it great for any busy week night meal, but impressive and tasty enough for a special occasion, say Father's Day. I like to prepare reduced fat and sodium meals. Depending on your taste buds, you may want to add a little salt to this recipe. Since I have been eating a low sodium diet for years now, the salt in the condensed soup used in this recipe, was enough for my taste buds.

Easy Healthy Tater Tot Pie!
Now I know what you are thinking, how can a Tater Tot Pie be healthy. Well hear me out, this new recipe of mine was not only easy but on the lighter side. I used lean ground turkey, Campbell's Broccoli Cheese Condensed Soup ( the Heart Healthy variety,which is lower in sodium and 98% fat free), lots of mixed frozen veggies, fat free milk, and just a 1/2 cup of Weight Watchers shredded cheese. No I didn't sneak in any bacon or butter, but we still enjoyed this healthier Tater Tot Pie.
