Strawberry Shortcake Margarita


One of my families favorite Summer time desserts is strawberry shortcake. It makes perfect sense to turn one of our favorite treats into a cocktail. Why not slow down for a moment this Summer and enjoy  this refreshing margarita. 

Ingredients:
Serves 2

Juice of 1 Small Lemon
1 Shot of Smirnoff Whipped Cream Flavored Vodka
5 Large Strawberries (Fresh or Frozen)
1 Shot of Roses Sweetened Lime Juice
1/2 Shot of Grenadine
2 Shots of Silver Tequila

Directions:

Blend all of your ingredients together and pour over ice. May also be blended with ice. Garnish with lemon, lime, or strawberry, optional.

Watermelon Margarita With Only 4 Ingredients


This margarita is super easy and refreshing. It will be perfect for your next Summer BBQ. 

Ingredients:
Makes 2 Large Margaritas

3 Cups of Seedless Watermelon Chilled and Cubed
1 Shot of Triple Sec Orange Liquor
2 Shots of Silver Tequila 
1 Shot of Roses Sweetened Lime Juice

Directions:

May be served over the rocks or blended with ice. 
If serving over the rocks, blend all of your ingredients together and pour over ice. Otherwise blend all of your ingredients including a few handfuls of ice together in blender. Garnish with watermelon or lime, optional.

I know Mother's day is over, but I am still reminiscing over our incredible weekend. Above is a photo collage of snap shots taken that weekend with my phone. It might have been the best Mother's day yet. We had fun at Lake Almanor on Saturday. On Sunday we enjoyed homemade margaritas and lobster. In spite of having a little too much fun in the sun, and ending up with a sunburn, even with sunscreen, it was still an amazing weekend. My sweet Joshua even transplanted my new beautiful hydrangeas for me.  I hope you had just as much fun. Poor Mans Knock Off For BJ's Very Berry Margarita And Juicing Tip


I recently had a chance to eat at BJ's Restaurant and Brew House in Reno, Nevada. Everything was delicious including the Very Berry Margarita I ordered. My husband and I thought it would be fun to have Margarita's on Cinco De Mayo. I decided I would attempt to recreate BJ's cocktail, but the poor mans way,  with no top shelf liquors. In this post I will share how to make our frugal knock off margarita on the rocks, my favorite way to enjoy it, and blended, how my husband prefers it. If top shelf is how you roll, no worries, I will share that recipe too.

On The Rocks Poor Mans BJ's Knock Off Very Berry Margarita 
Ingredients:
(Serves 2)

 Juice of 7 Fresh Strawberries Stem Removed
Juice of 14 Fresh Blackberries
Juice of 1 Fresh Lime
2 Shots of Dekuyper Triple Sec Orange Liquor
2 Shots of Jose Cuervo Blue Agave Silver Tequila
2 Shots of Rose's Sweetened Lime Juice

Directions:

After juicing your fresh strawberries, blackberries, and lime, you should end up with approximately 2 shots of juice. Mix juice with the remaining ingredients, and serve over ice. Garnish with fresh lime, salted rim optional.



Quick Juicing Tip:

I have a great tip, for a quick make shift juicing station. Cleaning an electric juicer can be chore, here is a much easier hand juicing method. Use your hand held lime or citrus juicer to not only juice your lime, but to squish your berries. Then take your softened berries and put them into a tea steeper or strainer, and extract remaining juice simply by squishing berries with the bottom of your shot glass.


Blended Poor Mans BJ's Knock Off Very Berry Margarita 
Ingredients:
(Serves 2)

 7 Fresh Strawberries Stem Removed
14 Fresh Blackberries
Juice of 1 Fresh Lime
2 Shots of Dekuyper Triple Sec Orange Liquor
2 Shots of Jose Cuervo Blue Agave Silver Tequila
2 Shots of Rose's Sweetened Lime Juice

Directions:

Put all of your ingredients into your blender, along with a few handfuls of ice, and blend until well combined. 


Garnish with fresh lime, salted rim optional.


 Top Shelf BJ's Knock Off Very Berry Margarita On The Rocks
Ingredients:
(Serves 2)

Juice of 7 Fresh Strawberries Stem Removed
Juice of 14 Fresh Blackberries

2 Shots of Cointreau Orange Liquor
2 Shots of Patron Silver Tequila
2 Shots of Rose's Sweetened Lime Juice


Directions:

After juicing your fresh strawberries, blackberries, and lime, you should end up with approximately 2 shots of juice. Mix juice with the remaining ingredients, and serve over ice. Garnish with fresh lime, salted rim optional.

If this CoronaRita doesn't make you excited for Cinco De Mayo and Summertime, I don't know what else will.  Chili's has always been a fun place to dine with friends and family, and now with their new Summer cocktail I am even more excited to dine there.  I feel like this cocktail was made special for my husband and I. It sounds so refreshing on a hot day, or even on a hot date,  I can't wait to try one.  
One of the things I love about Chili's is that they offer lighter items on their menu.  They have lots of great dinner entree choices that are under 750 calories and 25 grams of fat.  They have a NEW Grilled Chicken Salad and Sweet and Spicy Chicken entree that both look incredible.

The new CoronaRita would complement any of their dinner entrees. With the sparkling Coronita, Jose Cuervo Especial Tequila, and fresh lime, what a great way to end a meal. I have never tried a margarita mixed  with beer so I am very intrigued.

I know I can't be the only one drooling over here.  The great part about desserts is that they are meant to be shared with family and friends.  Although I must admit, these desserts look so good, you might not want to share.  The point is, it's almost Summer, the kids will be on school break soon, get everyone together for a great relaxing meal at a Chili's restaurant near you.
